Crispy Roasted Potatoes

  1. Preheat oven to 400
  2. Slice potatoes in even sized cubes.
  3. I do this be slicing potatoes lengthwise into 8 wedges, then chop in cubes.
  4. Add potato cubes to bowl.
  5. Add olive oil and mix to coat potatoes.
  6. Add Italian seasoning and parmesan cheese and stir to coat potatoes.
  7. Line a rimmed cookie sheet with foil and spray with non-stick spray.
  8. Add potatoes to pan in single layer.
  9. It is important that the potatoes do not touch!!
  10. They won't get crispy if they're crowded together.
  11. Bake for 20 -30 minutes.
