Crispy Roasted Potatoes
- 2 baking potatoes
- 2 tbsp olive oil
- 2 tsp italian herb blend
- 1/3 cup parmesan cheese
- Preheat oven to 400
- Slice potatoes in even sized cubes.
- I do this be slicing potatoes lengthwise into 8 wedges, then chop in cubes.
- Add potato cubes to bowl.
- Add olive oil and mix to coat potatoes.
- Add Italian seasoning and parmesan cheese and stir to coat potatoes.
- Line a rimmed cookie sheet with foil and spray with non-stick spray.
- Add potatoes to pan in single layer.
- It is important that the potatoes do not touch!!
- They won't get crispy if they're crowded together.
- Bake for 20 -30 minutes.
