Pan Fried Salmon with Flavoured Butter
- 30g butter, at room temperature
- 1 1/2 tablespoons KRAFT French Dressing
- 200g chat potatoes, peeled Safeway 2 pkg For $5.00 thru 02/09
- 2 tablespoons KRAFT French Dressing, extra
- 75g green beans, trimmed and blanched
- 2 teaspoon oil
- 2 salmon fillets (approx 150g each), skin on
- salt and pepper, to taste
- Beat butter and dressing in a small bowl with an electric hand beater until well combined and smooth.
- Set aside.
- Cook potatoes in a large saucepan of boiling water until tender, slice thinly.
- Heat extra dressing in a non-stick frying pan over medium heat.
- Add potatoes, beans and cook for 2-3 minutes or until heated through and beans are tender.
- Heat oil in another non-stick frying pan.
- Season fish with salt and pepper and place, skin side down, and cook for 2 minutes each side, or until cooked to your liking.
- Remove from the pan and rest for 2 minutes.
- Serve fish on a bed of the potato and bean mixture.
- Spoon butter mixture onto fish just prior to serving.
