Pan Fried Salmon with Flavoured Butter

  1. Beat butter and dressing in a small bowl with an electric hand beater until well combined and smooth.
  2. Set aside.
  3. Cook potatoes in a large saucepan of boiling water until tender, slice thinly.
  4. Heat extra dressing in a non-stick frying pan over medium heat.
  5. Add potatoes, beans and cook for 2-3 minutes or until heated through and beans are tender.
  6. Heat oil in another non-stick frying pan.
  7. Season fish with salt and pepper and place, skin side down, and cook for 2 minutes each side, or until cooked to your liking.
  8. Remove from the pan and rest for 2 minutes.
  9. Serve fish on a bed of the potato and bean mixture.
  10. Spoon butter mixture onto fish just prior to serving.
