Greek Salad: Horiatiki Salad
- 1/2 small green bell pepper, chopped
- 1/2 small red onion, sliced
- 1/3 cup Kalamata or other brine-cured black olives, rinsed
- 1/4 seedless cucumber, chopped
- 1 cup cherry or grape tomatoes, halved
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons finely chopped fresh oregano
- 2 teaspoons fresh lemon juice, or to taste
- Salt and freshly ground black pepper
- 4 thick slices feta cheese (about 8 ounces)
- In a large bowl, toss together all ingredients except the feta.
- Put feta on 4 serving plates and spoon some of the salad over each.
- Serve.
