Marinated Red Onion Recipe

  1. Cut onion in half width wise, remove the skin, then slice very thin.
  2. (approx 1/8"-use a mandoline if available)
  3. Lay out the onions in a nonreactive container
  4. Season onions with salt and juice of two limes.
  5. Mix until well incorporated.
  6. Let the onions sit for about 1/2 hour to marinate.
  7. When onions are ready, they will be a beautiful deep pink color.
