Mad Cow Chili

  1. Cook onions in bacon drippings over medium heat until they are translucent.
  2. Add beef and garlic, chile, cumin and oregano and cook about 1/2 hour until meat is evenly browned.
  3. Add tomatoes, water, and beer.
  4. Bring to a boil.
  5. Lower heat and simer uncovered for 1 hour.
  6. Mix masa harina with a little water to make a thin paste and stir into chili to acheive the desirede consistency.
  7. Serve hot with cornbread or sourdough bread.
