Avocado Chef Salad
- 2 cups lettuce chopped, red leaf
- 1 cup watercress chopped
- 1/2 cup mushrooms thinly sliced
- 1/2 cup black olives
- 1 cup croutons
- 1 each avocados flesh cubed
- 2 large eggs hard cooked, sliced
- 4 ounces swiss cheese julienned
- 12 ounces meat cooked, ham, turkey and / or roast beef, julienned
- Combine lettuce, watercress, mushrooms, olives and croutons in large bowl.
- Toss lightly to mix.
- Arrange avocado and eggs on top of salad.
- Top with Swiss cheese and meat.
- Make vinaigrette.
- Just before serving, shake dressing, pour over salad and toss.
