Easy Any-Berry Pie
- 1 cup all-purpose flour
- 1/4 tsp salt (slightly heaping)
- 1/4 tsp sugar (slightly heaping)
- 1/8 tsp baking powder (heaping)
- 2 tbsp milk or water
- 3 1/2 tbsp butter (melted), or margarine (melted), or oil
- 2 cup to 2 1/2 cups berries, divided (strawberries should be hulled and quartered, cherries--pitted)
- 1/3 cup sugar or sweetener
- 1 1/2 tbsp cornstarch
- 1 pinch salt
- 1/2 tsp vanilla extract
- 1/2 tbsp lemon juice
- 1/4 tsp cinnamon (if using strawberries or cherries, omit and add 1/8 teaspoon almond extract instead)
- Preheat oven to 350F.
- In medium bowl, whisk together the flour, salt, sugar, and baking powder.
- In small bowl, whisk together the milk/water and melted butter/margarine or oil.
- Pour over the flour mixture.
- Mix with a fork until dough is evenly moistened.
- Place dough into pie pan and pat across the bottom of pan and up sides using a flat-bottomed cup.
- Bake for 15 minutes.
- Remove and set aside to cool.
- For the pie filling: Add 1 cup berries to a small saucepan.
- Mash using a potato masher to a chunky sauce.
- Whisk in sugar/sweetener, salt, cornstarch, vanilla extract, lemon juice, and cinnamon/almond extract.
- Bring to a simmer over medium heat and cook, stirring occasionally, until sugar/sweetener dissolves and mixture thickens (approximately 3-5 minutes).
- Remove from heat and cool completely.
- Once cooled, mix in remaining cup (or 1 1/4 cup) of berries until well combined.
- Pour mixture into pie crust.
- Refrigerate for at least 2 hours before serving to allow filling to set.
