Easy Any-Berry Pie

  1. Preheat oven to 350F.
  2. In medium bowl, whisk together the flour, salt, sugar, and baking powder.
  3. In small bowl, whisk together the milk/water and melted butter/margarine or oil.
  4. Pour over the flour mixture.
  5. Mix with a fork until dough is evenly moistened.
  6. Place dough into pie pan and pat across the bottom of pan and up sides using a flat-bottomed cup.
  7. Bake for 15 minutes.
  8. Remove and set aside to cool.
  9. For the pie filling: Add 1 cup berries to a small saucepan.
  10. Mash using a potato masher to a chunky sauce.
  11. Whisk in sugar/sweetener, salt, cornstarch, vanilla extract, lemon juice, and cinnamon/almond extract.
  12. Bring to a simmer over medium heat and cook, stirring occasionally, until sugar/sweetener dissolves and mixture thickens (approximately 3-5 minutes).
  13. Remove from heat and cool completely.
  14. Once cooled, mix in remaining cup (or 1 1/4 cup) of berries until well combined.
  15. Pour mixture into pie crust.
  16. Refrigerate for at least 2 hours before serving to allow filling to set.
