Blue Corn Waffles
- 12 cup blue cornmeal
- 12 cup all-purpose flour
- 12 tablespoon baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 14 teaspoon brown sugar
- 1 18 cups low-fat buttermilk
- 1 large egg
- In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.
- Whisk gently to blend.
- (Mix may be stored at this point in the refrigerator).
- Preheat waffle iron.
- Whisk together buttermilk and egg until well blended.
- Fold the dry mix into the wet mixture until evenly moistened.
- Pour about 1 cup of batter into the waffle iron and cook through.
