Blue Corn Waffles

  1. In a large bowl, combine cornmeal, flour, baking powder, baking soda, salt, and sugar.
  2. Whisk gently to blend.
  3. (Mix may be stored at this point in the refrigerator).
  4. Preheat waffle iron.
  5. Whisk together buttermilk and egg until well blended.
  6. Fold the dry mix into the wet mixture until evenly moistened.
  7. Pour about 1 cup of batter into the waffle iron and cook through.
