Peanut Rocky Road Bars

  1. Line 8x8x2" bkaing pan with heavy duty plastic wrap, allowing plastic to hang over sides of pan.
  2. In a small bowl, combine chocolate and butter.
  3. Microwave on High, in 30-second intervals, stirring between each, until chocolate is melted and smooth (about 1 minute total).
  4. Add peanut butter and vanilla, stirring to combine.
  5. Combine 1/3 cup chocolate mixture with graham cracker crumbs.
  6. Press into bottom of prepared pan.
  7. Combine remaining chocolate mixture with marshmallows, 3/4 cup peanuts and toffee bits, being sure to completely coat marshmallows.
  8. Pour into pan, pressing down gently.
  9. Top evenly with remaining 3/4 cup peanuts, pressing down gently with hands.
  10. Cover with heavy duty plastic wrap; freeze for 2 hours.
  11. Remove from pan using plastic wrap as handles.
  12. Invert onto a cutting board.
  13. Spread melted candy coating evenly over candy.
  14. Allow chocolate to set at room temperature.
  15. Once chocolate is set, invert candy.
  16. Using serrated knife, cut into 4x1" bars.
