Thai Papaya Salad (Somtam Malagor)

  1. Peel the papaya, cut in half lengthwise and scrape the seeds out with a spoon.
  2. Finely shred the flesh of the papaya.
  3. Pound the garlic and chili peppers in a mortar.
  4. Add the shredded papaya a little at a time and continue to pound the flesh until it turns soft.
  5. Add the sliced beans and tomatoes.
  6. Season wtih fish sauce, palm sugar and lime juice.
  7. Remove papaya salad to serving plate; garnish with peanuts and chili peppers as desired.
