Thai Papaya Salad (Somtam Malagor)
- 1 green papaya
- 4 cloves garlic
- 4 red chili peppers, seeded and sliced
- 3 Chinese long beans, cut into 2 cm. pieces
- 2 tomatoes, chopped
- 3 tbsp. fish sauce
- 1 tbsp. palm sugar
- 1 cup lime juice
- 2 tbsp. crushed peanuts, for garnish
- Sliced red chili peppers, for garnish
- Peel the papaya, cut in half lengthwise and scrape the seeds out with a spoon.
- Finely shred the flesh of the papaya.
- Pound the garlic and chili peppers in a mortar.
- Add the shredded papaya a little at a time and continue to pound the flesh until it turns soft.
- Add the sliced beans and tomatoes.
- Season wtih fish sauce, palm sugar and lime juice.
- Remove papaya salad to serving plate; garnish with peanuts and chili peppers as desired.
