Simplicity Recipe

• One tomato, sliced in half lengthwise, then into 1/4 inch slices
• About 16 small rectangles of pecorino romano (about 1/8 inch thick)(depending on how many tomato slices you have.)
• About 8 dried apricots butterflied in half
• About 16 thyme flowers (with some leaves attached)
• Zest of 1 lemon
• Pepper to season
• Olive oil to drizzle

1. On a slice of tomato stack a slice of the cheese then an apricot half and finaly a couple pieces of zest.
2. Top each with a thyme flower, a sprinkle of pepper, and a drizzle of olive oil.
