Simplicity Recipe
- One tomato, sliced in half lengthwise, then into 1/4 inch slices
- About 16 small rectangles of pecorino romano (about 1/8 inch thick)(depending on how many tomato slices you have.)
- About 8 dried apricots butterflied in half
- About 16 thyme flowers (with some leaves attached)
- Zest of 1 lemon
- Pepper to season
- Olive oil to drizzle
- On a slice of tomato stack a slice of the cheese then an apricot half and finaly a couple pieces of zest.
- Top each with a thyme flower, a sprinkle of pepper, and a drizzle of olive oil.
