Nacho Ordinary Pizza
- 18 large pepperoni slices
- 14 cup ultra- low-carb marinara sauce (Transforming Recipes Cookbook, page 169 or any low carb sauce)
- 14 cup cheddar cheese (shredded)
- 2 tablespoons jalapenos (diced)
- 2 tablespoons black olives (sliced)
- Set oven to broil.
- Line baking sheet with aluminum foil.
- Place two paper towels on a microwave-safe plate.
- Arrange pepperoni sliced in a single layer on plate.
- Cover with another paper towel.
- Microwave on high for 1 minute.
- Remove from microwave.
- Push down on chips, soaking up excess grease.
- When pepperoni slices are crisp, arrange in a single layer on baking sheet.
- Spoon a small dollop of Marinara sauce on top of pepperoni slices.
- Sprinkle cheese on top of sauce.
- Place under broiler for 1-2 minutes or until cheese begins to melt.
- Remove from oven.
- Evenly distribute diced jalapeno on top of cheese.
- Place one black olive on top of jalapenos.
