Lithuanian Crullers: Gruzdai

  1. Beat egg yolks and egg together.
  2. Add sugar, salt, butter and milk; mix well.
  3. Add flour and vanilla; finish mixing in flour by hand.
  4. Knead dough until smooth; divide into 2 or 3 portions.
  5. Roll out each portion as thin as possible.
  6. Cut into strips about 1 1/2 inches wide; cut diagonally into 3 inch lengths.
  7. Make a small slit in center of each piece using knife.
  8. Fold one end through slit and pull out with a slight stretch.
  9. Fry in hot oil until lightly browned.
  10. Drain on paper towels.
  11. Let cool.
  12. Dust with powdered sugar.
  13. One tablespoon brandy may be substituted for vanilla extract.
  14. Yield: 6 to 8 dozen.
