Lithuanian Crullers: Gruzdai
- 6 egg yolks
- 1 whole egg
- 5 tbsp. sugar
- 1/4 tsp. salt
- 3 tbsp. melted butter
- 1/4 cup milk
- 3 cups all purpose flour
- 1 tsp. vanilla extract
- rum flavoring
- Oil for frying
- Powdered sugar
- Beat egg yolks and egg together.
- Add sugar, salt, butter and milk; mix well.
- Add flour and vanilla; finish mixing in flour by hand.
- Knead dough until smooth; divide into 2 or 3 portions.
- Roll out each portion as thin as possible.
- Cut into strips about 1 1/2 inches wide; cut diagonally into 3 inch lengths.
- Make a small slit in center of each piece using knife.
- Fold one end through slit and pull out with a slight stretch.
- Fry in hot oil until lightly browned.
- Drain on paper towels.
- Let cool.
- Dust with powdered sugar.
- One tablespoon brandy may be substituted for vanilla extract.
- Yield: 6 to 8 dozen.
