Mexican Meat Loaves
- 2 whole Eggs
- 2 cups Oatmeal (quick Or Regular, Your Choice)
- 23 cups Salsa
- 1/4 cups Onion, finely chopped
- 2 teaspoons Parsley
- 1- 1/2 Tablespoon Chili Powder
- 1- 1/2 teaspoon Salt
- 1 cup Water
- 2 pounds Lean Hamburger
- 1/4 cups Grated Pepper Jack Cheese
- Mix everything but the meat and cheese together in a large bowl.
- Let it soak a bit until the oatmeal is soft.
- Try to ignore the fact that it looks like cat food.
- Add the hamburger and mix any way possible.
- I usually use my hands and just revel in the grossness.
- Divide it into 8 equal portions and form into an oval, loaf shape.
- Place 4 loaves in a greased, glass pie plate.
- Microwave on high, 7-9 minutes.
- Sprinkle half of the cheese on the tops of the loaves and micro-cook another minute, or until the cheese is melted.
- Serve immediately with extra salsa on the side.
- If I didnt have picky kids, Id add chopped chilies or jalapenos to the mix too.
