Mexican Meat Loaves

  1. Mix everything but the meat and cheese together in a large bowl.
  2. Let it soak a bit until the oatmeal is soft.
  3. Try to ignore the fact that it looks like cat food.
  4. Add the hamburger and mix any way possible.
  5. I usually use my hands and just revel in the grossness.
  6. Divide it into 8 equal portions and form into an oval, loaf shape.
  7. Place 4 loaves in a greased, glass pie plate.
  8. Microwave on high, 7-9 minutes.
  9. Sprinkle half of the cheese on the tops of the loaves and micro-cook another minute, or until the cheese is melted.
  10. Serve immediately with extra salsa on the side.
  11. If I didnt have picky kids, Id add chopped chilies or jalapenos to the mix too.
