Artichokes With Lemon Pepper Oil Recipe
- 4 x artichokes - (medium to large)
- 2 Tbsp. lemon pepper oil
- 1 c. water
- Trim the stems off the artichokes, snip the sharp points off the ends of the leaves with kitchen scissors and wash carefully between the leaves.
- Place trivet on the bottom of a 5-qt or possibly larger pressure cooker and add in water.
- Place the artichokes inside the cooker, flowering-side up and drizzle 1/2 Tbsp.
- of lemon pepper oil over each artichoke.
- Close the lid and bring pressure to second red ring (15 pounds pressure) over high heat.
- Adjust heat to stabilize pressure at first red ring.
- Cook for 10 to 12 min depending on the size and age of the artichokes.
- Remove pan from heat and use the Natural Release Method.
- Artichokes may be served either hot or possibly cool.
- This recipe yields 4 servings.
