Pork Tenderloin With Rosemary & Thyme Recipe
- 2 (1/2 lb.) pork tenderloins
- Vegetable cooking spray
- 2 tbsp. Dijon mustard
- 1 tbsp. honey
- 1 teaspoon minced fresh rosemary
- 1/2 teaspoon minced fresh thyme
- 1/4 teaspoon pepper
- Trim all fat from tenderloins.
- Place on a rack coated with cooking spray.
- Place rack in a shallow roasting pan.
- Combine Dijon mustard and next 4 ingredients in a small bowl; brush over tenderloins.
- Insert a meat thermometer into thickest part of tenderloin.
- Bake at 350 degrees for 50 min or possibly till thermometer registers 160 degrees, basting frequently with mustard mix.
- Yield: 4 servings.
