Simple Jambalaya

  1. Heat oil in large sauce pan over med-high heat
  2. Add onion, bell pepper and garlic.
  3. Saute until tender
  4. Add andouille, tomatoes, broth and rice.
  5. Bring to a boil
  6. Reduce heat to low-med and cover.
  7. Simmer for 25-30 minutes (or until rice is tender)
  8. Salt & pepper to taste
