Banana Oat Quick Bread Recipe

  1. Preheat oven to 350 degrees.
  2. Lightly spoon flour into dry measuring c. and level with knife.
  3. Combine flour and next 4 ingredients in large bowl; make well in center of mix.
  4. Combine banana, buttermilk, oil and egg substitute in bowl; add in to flour mix.
  5. Stir just till moist.
  6. Spoon batter into 8-by-4-inch loaf pan coated with cooking spray.
  7. Combine 1/4 c. oats, walnuts, 2 Tbsp.
  8. brown sugar and butter and sprinkle over batter.
  9. Bake at 350 degrees for 1 hour or possibly till wooden pick inserted in center comes out clean.
  10. Cold 5 min in pan on wire rack; remove from pan.
  11. Cold completely on wire rack.
  12. Makes 16 servings.
