Banana Oat Quick Bread Recipe
- 1 1/2 c. all-purpose flour
- 1 c. quick-cooking oats
- 3/4 c. packed brown sugar
- 2 1/2 tsp baking pwdr
- 1/4 tsp salt
- 1 c. mashed ripe banana
- 1/2 c. low-fat buttermilk
- 1/4 c. vegetable oil
- 1/4 c. egg substitute or possibly 2 large egg whites Cooking spray
- 1/4 c. quick-cooking oats
- 2 Tbsp. coarsely minced walnuts
- 2 Tbsp. brown sugar
- 2 tsp butter or possibly stick margarine
- Preheat oven to 350 degrees.
- Lightly spoon flour into dry measuring c. and level with knife.
- Combine flour and next 4 ingredients in large bowl; make well in center of mix.
- Combine banana, buttermilk, oil and egg substitute in bowl; add in to flour mix.
- Stir just till moist.
- Spoon batter into 8-by-4-inch loaf pan coated with cooking spray.
- Combine 1/4 c. oats, walnuts, 2 Tbsp.
- brown sugar and butter and sprinkle over batter.
- Bake at 350 degrees for 1 hour or possibly till wooden pick inserted in center comes out clean.
- Cold 5 min in pan on wire rack; remove from pan.
- Cold completely on wire rack.
- Makes 16 servings.
