Granola (Eeecooks.com)
- 2 cups old fashioned oats
- 12 cup sliced almonds, raw
- 2 tablespoons toasted wheat germ
- 3 tablespoons dark brown sugar (packed)
- 1 tablespoon warm water
- 14 teaspoon coarse salt
- 3 tablespoons maple syrup (grade B)
- 2 tablespoons canola oil (I use whatever I have available)
- 14 teaspoon ground cinnamon
- 18 teaspoon nutmeg (about 16 scrapings)
- 12 tablespoon pure vanilla extract
- 14 cup golden raisin
- 14 cup dried cherries (I sometimes use cranberries)
- In medium bowl mix almonds and wheat germ.
- In another bowl mix brown sugar, water, salt, maple syrup, oil, cinnamon, nutmeg and vanilla.
- Stirring the oat mixture with a spoon, drizzle in the syrup.
- Spread mixture on a parchment lined cookie sheet.
- Bake 1 hour 20 minutes (or until crispy), stirring quickly every 20 minutes.
- Set pan on trivet to cool for 1 hour.
- Put granola in large bowl and mix in raisins and cherries.
- Store in airtight container up to 1 week; after that keep refrigerated.
