Biscuit Dough(Very Light; For Obstorte, Roll, Cakes And Cheesecake.)
- 6 egg yolks
- 1/2 c. cold water
- 1 1/2 c. sugar
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. vanilla extract
- 1/2 tsp. orange or lemon extract
- 1/2 tsp. salt
- 6 egg whites
- 3/4 tsp. cream of tartar
- Sift flour 4 times.
- Beat egg yolks until thick and creamy, lemon colored.
- Add water; continue beating until very thick. Gradually beat in sugar, then extract.
- Fold in flour, a little at a time.
- Beat egg whites until foamy.
- Add cream of tartar and beat until they form moist, glossy peaks.
- Fold in egg yolk mixture.
- Bake in angel food pan in slow oven at 325u0b0 for 1 hour. Invert 15 minutes.
- Use whatever size pan is needed for: obstorte, cake, cheesecake, etc.
- Fill with apricot jam.
- Top with cream filling.
- Decorate with cake decorator.
