Fabulous Fruit Pizza
- 2 12 cups sugar, divided
- 12 cup butter
- 1 egg
- 1 teaspoon vanilla extract, divided
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 6 tablespoons buttermilk
- 3 -4 cups flour
- 3 tablespoons cornstarch
- 18 teaspoon salt
- 34 cup water
- 1 cup orange juice
- 14 cup lemon juice
- 8 ounces cream cheese
- 5 -6 kiwi, peeled and sliced
- 2 -3 bananas, sliced
- 1 pint strawberry, sliced
- 11 ounces mandarin oranges, drained
- 12 cup blueberries
- Cream one cup sugar and butter until smooth.
- Add egg, 1/2 teaspoon vanilla and baking powder; continue beating.
- In a separate bowl, combine soda and buttermilk; add to creamed mixture.
- Stir in flour until soft dough forms, adding enough so that the dough is not sticky.
- Divide dough in half.
- Wrap one half in plastic zipping bag and freeze for future use.
- Roll remaining half into a greased 12" pizza pan.
- Bake at 400 degrees for 10 minutes, or until top becomes slightly browned; cool.
- In small saucepan, combine one cup sugar, cornstarch and salt.
- Add water, orange juice and lemon juice.
- Cook and stir on medium heat until mixture becomes thick and bubbly.
- Remove from heat.
- Cool to room temperature.
- Mix cream cheese with 1/2 cup sugar.
- Add remaining vanilla.
- Spread mixture on crust.
- Arrange fruit on crust in circles, beginning with kiwi fruit on outside edge and overlapping fruit.
- Continue circling with bananas, strawberries and oranges finishing with a small circle of strawberries and bananas.
- Randomly place blueberries on top of other fruits.
- Carefully spoon sauce over top of fruit.
- Cut into 8 large pieces; serve.
