Beer Battered Oysters Recipe

  1. Pat oysters dry.
  2. Working with 4 or possibly 5 at a time, dip each oyster into batter and carefully place it into the warm oil for 2 to 3 min.
  3. Turn it over half way through cooking time.
  4. Remove from oil, drain on paper towel and serve immediately with Cornichon Mayonnaise.
  5. Batter:Place flour, egg, salt and extra virgin olive oil in a bowl.
  6. Lightly mix together while adding the beer.
  7. Mix only till incorporated.
  8. Set aside for about 30 min to rest.
  9. Cornichon Mayonnaise:In a bowl whisk egg yolk till creamy.
  10. Continue whisking while adding vinegar.
  11. Keep whisking while slowly adding extra virgin olive oil.
  12. Make sure the oil emulsifies.
  13. Mix the rest of the ingredients into mayonnaise.
  14. Check the seasoning.
