Hawaiian Beets
- 2 (16 ounce) canswhole beets, drained
- 1 (20 ounce) can pineapple chunks, drained (reserve juice)
- 1 tablespoon cornstarch
- 1 tablespoon light molasses
- 14 teaspoon salt
- Drain beets and pineapple separately; measure pineapple juice to make 1 cup (if needed add a little beet juice to make up any difference).
- Combine juice, cornstarch, molasses and salt in pan; stir until lumps are gone.
- Heat over medium heat until sauce thickens and is clear.
- Add beets and heat until hot.
- Just before serving, add pineapple; warm two or three minutes.
