Chicken Taco Nite
- 1 lb of thin sliced chicken breast
- 1 (14 ounce) can chicken stock
- 1 (1 1/4 ounce) package taco seasoning (your choice, I prefer Ortega)
- 12 cup salsa (your choice, I prefer Herdez-Medium)
- 1 (10 ounce) canof diced tomatoes and green chilies (Lime and Cilantro flavored, I prefer Rotel)
- soft flour (your choice) or corn tortilla, hard taco shells, tortilla chips (your choice)
- sour cream
- shredded lettuce
- shredded taco cheese
- salsa verde (your choice, I prefer Herdez)
- In a large frying pan place chicken and add stock until chicken is completely covered.
- Add juice from can of diced tomatoes.
- Stir in pkg of Taco seasoning and simmer covered for 15 minutes.
- Remove chicken and let rest for 5 minutes, return stock to boil while chicken breasts are resting.
- Shred chicken and add back to stock.
- Add diced tomatoes with chilies and 1/2 cup of salsa.
- Reduce heat and simmer for 5-10 minutes.
- Eat on soft corn tortillas with sour cream, lettuce, and shredded cheese.
- Top off with Salsa Verde.
