Molten-Middle Truffle Cookies

  1. Heat oven to 350F.
  2. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min.
  3. or until butter is melted, stirring after 30 sec.
  4. Stir until chocolate is completely melted and mixture is well blended.
  5. Add milk and vanilla; mix well.
  6. Stir in flour and nuts.
  7. (Dough will be stiff.)
  8. Shape 1 Tbsp.
  9. dough around each caramel half, enclosing caramel completely.
  10. Roll in sugar.
  11. Place, 1 inch apart, on baking sheets.
  12. Bake 6 to 8 min.
  13. or until cookies are soft and shiny.
  14. Let stand 5 min.
  15. on baking sheets.
  16. Remove to wire racks; cool completely.
  17. (Cookies will firm up as they cool.)
