Chicken Loca Recipe
- 1 pound chicken cuts (any parts)
- 6 pcs big potatoes, cut into diced
- 1 small can 235 grams pineapple chunks
- 2 large carrot, cut into diced
- 1 pack 320 ml sweet style tomato sauce
- 1 white onion, minced
- 4 garlic cloves, minced
- 1 red pepper, diced
- salt and pepper to taste
- 2 tbsp. extra virgin olive oil
- 2 c. water
- Saute/fry garlic, onion and chicken cuts.
- Let it simmer for 10 mins till chicken is tender.
- Add in the sliced tomatoes, carrots and pineapple.
- Saute/fry.
- Add in 2 c. water and let it simmer till vegetables and chicken are tender.
- Pour in the tomato sauce and wait till the sauce is thick.
- Put salt, red bell pepper and black pepper to taste.
- Serve with rice.
- Makes 6 servings
