Melon Juice with Champagne (or Prosecco)
- 2 ripe cantaloupes, honeydew or other sweet melon
- 1 tablespoon lime juice
- Pinch salt
- 1 bottle Champagne or Prosecco
- 1 small container blueberries
- Peel and seed melons and chop into 2-inch chunks.
- Place the melon and lime juice in blender or food processor and blend until smooth.
- Add pinch of salt, to taste.
- Chill until ready to serve.
- Pour mixture half way into champagne flutes.
- Fill the rest of the glass with Champagne or Prosecco.
- Drop a few blueberries into the glass.
