Artichoke, Red Pepper & Potato Salad

  1. Boil potatoes until fork tender, slice into fourths.
  2. In a bowl, toss together first 4 ingredients until nicely mixed.
  3. Add the lemon juice and toss to blend.
  4. Check seasonings.
  5. Cover bowl with plastic wrap and refrigerate until about 20 minutes before serving.
  6. Serve mildly chilled, but not cold.
