Vera Cruz Vegetable Soup Recipe

  1. Peel and dice carrot and potatoes, dice squash.
  2. Saute/fry in vegetable oil.
  3. Bring water and salt to a boil, reduce heat and add in vegetables; add in bouillon cube and simmer till vegetables are still crisp but done.
  4. When serving soup, serve with a slice of lemon.
  5. Squeeze lemon into soup to taste.
  6. This adds flavor and zest.
