Banana Cream Pie/Low Cal Recipe
- 1 env unflavored gelatin
- 3 x Large eggs * see note
- 6 pkt sweet n low
- 2 med bananas sliced
- 1/2 c. evaporated skim lowfat milk
- 1 c. lowfat lowfat milk
- 2 tsp vanilla
- 1 Tbsp. fresh lemon juice
- 1 x 9" cracker crumb crust
- * Instead of Large eggs, you can use eggbeaters to equal 3 Large eggs.
- In a double boiler, soften gelatin in evaporated lowfat milk.
- In medium bowl, beat Large eggs and lowfat lowfat milk til frothy.
- Add in to double boiler.
- Heat over warm water stirring constantly, till mix coats a metal spoon.
- Remove from heat.
- Stir in Sweet n Low and vanilla, toss bananas in lemon juice and arrange on bottom of prepared crust.
- Pour filling over bananas.
- Chill several hrs.
