Ham and Cheese Topped Chicken With Roasted Broccoli

  1. Ajust rack to lower-middle position and preheat to 475 degrees.
  2. Brush a large rimmed baking sheet with 1 TBSP oil.
  3. Toss the broccoli with the remaining 2 TBSP oil, sugar and salt and pepper to taste.
  4. Pat the chicken dry with paper towels.
  5. Season with salt and pepper.
  6. Arrange on baking sheet.
  7. Spread the mustard over the chicken then top each with a slice of ham and sprinkle with cheese.
  8. Sprinkle the cracker crumbs over the cheese, pressing gently to adhere.
  9. Arrange broccoli around the edge of the pan.
  10. Roast until chicken is cooked through and broccoli is well browned, about 25 minutes, covering with foil if the cracker crumbs brown too quickly.
  11. Let stand 5 minutes before serving.
