Ham and Cheese Topped Chicken With Roasted Broccoli
- 3 tablespoons olive oil
- 1 12 lbs broccoli, trimmed, cut into 1/2-inch-thick, 3-inch long planks
- 12 teaspoon sugar
- salt and pepper
- 4 boneless skinless chicken breasts
- 2 tablespoons Dijon mustard
- 4 slices deli ham
- 4 ounces grated swiss cheese
- 15 crackers, coarsely crushed (such as Ritz)
- Ajust rack to lower-middle position and preheat to 475 degrees.
- Brush a large rimmed baking sheet with 1 TBSP oil.
- Toss the broccoli with the remaining 2 TBSP oil, sugar and salt and pepper to taste.
- Pat the chicken dry with paper towels.
- Season with salt and pepper.
- Arrange on baking sheet.
- Spread the mustard over the chicken then top each with a slice of ham and sprinkle with cheese.
- Sprinkle the cracker crumbs over the cheese, pressing gently to adhere.
- Arrange broccoli around the edge of the pan.
- Roast until chicken is cooked through and broccoli is well browned, about 25 minutes, covering with foil if the cracker crumbs brown too quickly.
- Let stand 5 minutes before serving.
