Black And White Bean Salad Recipe
- 1 (15 ounce.) can Great Northern beans, rinsed and liquid removed
- 1 (15 ounce.) can black beans, rinsed and liquid removed
- 1 1/4 c. peeled, seeded and minced tomato
- 3/4 c. diced red pepper
- 3/4 c. diced yellow pepper
- 3/4 c. thinly sliced green onions
- 1/2 c. salsa
- 1/4 c. red wine vinegar
- 2 tbsp. minced fresh cilantro
- 1/4 teaspoon salt
- 1/8 teaspoon grnd pepper
- 8 to 10 c. finely shredded romaine lettuce
- Combine white beans, black beans and minced tomato in large bowl, mixing gently.
- Add in peppers and green onions, stir gently to combine.
- Set bean mix aside.
- Combine salsa, vinegar, cilantro, salt and pepper in a small bowl; stir with a whisk till well blended.
- Pour over bean mix and toss gently.
- Line a large serving bowl with shredded lettuce; top with bean mix.
- Chill.
- Yield: 10 servings (76 calories per serving).
