Black And White Bean Salad Recipe

  1. Combine white beans, black beans and minced tomato in large bowl, mixing gently.
  2. Add in peppers and green onions, stir gently to combine.
  3. Set bean mix aside.
  4. Combine salsa, vinegar, cilantro, salt and pepper in a small bowl; stir with a whisk till well blended.
  5. Pour over bean mix and toss gently.
  6. Line a large serving bowl with shredded lettuce; top with bean mix.
  7. Chill.
  8. Yield: 10 servings (76 calories per serving).
