low carb eggplant pizza

  1. Preheat oven 350
  2. Wash eggplant, remove skin and cut long way into four pieces.
  3. Take olive oil, pepper, garlic salt and oregano mix in a small bowl.
  4. Brush mixture onto both sides of eggplant pieces
  5. Lay pieces on cookie sheet.
  6. Top with red sauce, cheese and pepperoni.
  7. Make sure pasta sauce/red pizza sauce doesn't have sugar added.
  8. Look for low net carbs with simple ingredients.
  9. Bake for 25 minutes or golden
