Chile-Cheese Supper Dish
- 6 large eggs
- 1 cup milk
- 4 tablespoons butter
- 1 lb monterey jack cheese, grated
- 1 cup cottage cheese
- 3 ounces cream cheese, cut in small pieces
- 1 cup chopped mild chile (I sometimes use canned)
- 12 cup cornmeal
- 1 12 teaspoons baking powder
- 1 teaspoon salt (to taste)
- Preheat the oven to 350F Butter a 2 1/2 quart baking dish.
- In a large bowl, beat the eggs well.
- Add the remaining ingredients and stir until well-blended.
- Pour into the prepared baking dish.
- Bake until a knife inserted in the center comes out clean, about 35-45 minutes.
