Texas Straw Hats
- 2 lb. ground beef
- 2/3 c. chopped celery
- 1 c. chopped onion
- 3 Tbsp. margarine
- 2 (6 oz.) cans tomato paste
- 1/2 c. catsup
- 2 c. water
- 2 tsp. Worcestershire sauce
- Tabasco sauce to taste
- 2 tsp. chili powder
- 1/2 tsp. thyme
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 (6 oz.) pkg. corn chips
- 2 c. shredded Longhorn cheese
- Brown ground beef with celery and onion in margarine in a large skillet, stirring until ground beef is crumbly.
- Drain. Add tomato paste, catsup, water, Worcestershire sauce, Tabasco sauce, chili powder, thyme, salt and pepper.
- Mix well. Simmer, uncovered, for 1 hour. Serve over corn chips and top with cheese. Yields 6 servings.
