Italian Baked Frittata

  1. Cook broccoli, mushrooms, red pepper and green onions in margarine or butter in 10-inch nonstick ovenproof skillet over medium-high heat until tender-crisp, about 3 minutes.
  2. Remove from heat.
  3. Mix egg substitute, mustard and Italian seasoning in bowl.
  4. Pour into skillet over vegetables.
  5. Bake at 375F for 20 to 25 minutes or until set.
  6. Serve immediately.
