Italian Baked Frittata
- 1 cup broccoli florets
- 1/2 cup sliced mushrooms
- 1/2 small red bell pepper, diced Target 1 pkg For $2.99 thru 02/06
- 2 green onions, cut into 1/2-inch pieces
- 2 tsp. margarine or butter
- 2 cups cholesterol-free egg product
- 2 Tbsp. GREY POUPON Dijon Mustard
- 1/2 tsp. Italian seasoning
- Cook broccoli, mushrooms, red pepper and green onions in margarine or butter in 10-inch nonstick ovenproof skillet over medium-high heat until tender-crisp, about 3 minutes.
- Remove from heat.
- Mix egg substitute, mustard and Italian seasoning in bowl.
- Pour into skillet over vegetables.
- Bake at 375F for 20 to 25 minutes or until set.
- Serve immediately.
