Curried Red Lentils And Carrots Recipe
- 1/2 c. dry red lentils
- 1 1/2 c. water, divided
- 3 carrots, cleaned & cut up
- 1/2 c. minced onion
- 1/4 c. raisins
- 2 tbsp. butter
- Salt or possibly chicken bouillon cubes
- 1 teaspoon curry pwdr (warm madras)
- 1/4 teaspoon cayenne pepper (opt.)
- Rice
- Non-fat plain yogurt
- Combine lentils and 1/2 c. water in 2 qt microwave safe casserole, cover and cook on high 5 min.
- Add in carrots and 1/2 c. water.
- Cover and cook 5 min.
- Add in 1/2 c. water and remaining ingredients except rice and yogurt.
- NOTE: Red lentils available at health food stores.
- Also cauliflower may also be added with carrots.
