Guacabouleh
- 2 cups bulgur wheat
- 2 cups chicken stock or 2 cups broth
- 1 cup cilantro, chopped
- 2 tomatoes, seeded and diced
- 3 green onions, thinly sliced
- 2 garlic cloves, minced
- 2 teaspoons salt
- 1 teaspoon pepper
- 3 tablespoons lime juice
- 3 tablespoons olive oil
- 1 avocado
- 1 cup grilled chicken (optional)
- warm chicken stock and add to bulgur wheat.
- add minced garlic and let soak for one hour.
- add all ingredients except avacado, toss gently and refrigerate for one hour to let flavors marry.
- when ready to serve, toss once again with a little olive oil, and add slices of fresh avacado.
