Couscous with Vegetables

  1. In a medium saucepan over high heat, bring stock to a boil.
  2. Add vegetables.
  3. Cook for 3 minutes.
  4. Add couscous and stir.
  5. Remove from heat.
  6. Cover and let stand for 5 minutes or until liquid is absorbed.
  7. Fluff with a fork and stir in almonds.
