Spiced Rice With Lentils

  1. In large nonstick saucepan, saute onion for 2 minutes or until translucent.
  2. Add ginger, garlic, dried red chile, and turmeric.
  3. Stir fry 1 minute.
  4. Add rice and lentils.
  5. Stir gently to mix.
  6. Add boiling water to cover ingredients by 1/2 inch.
  7. Bring back to boil, reduce heat, and simmer, covered, 45-50 minutes or till liquid is absorbed and rice and letils are tender.
  8. Remove mixture from heat and let sit, covered, about 5 minutes.
  9. Fluff gently with fork.
  10. Drizzle with lemon juice and garnish with chopped cilantro, if desired.
