Green, Eggs & Ham (Warm Brussels Sprout Salad)
- 1 12 lbs Brussels sprouts, Shredded
- 1 shallot
- 14 cup red onion, Chopped
- 3 garlic cloves, Chopped
- 1 cup ham, Chopped
- 2 tablespoons champagne vinaigrette (I use Girard's)
- 2 tablespoons olive oil
- 2 teaspoons crushed dried rosemary
- 1 teaspoon dried thyme
- 2 tablespoons spicy ground mustard or 2 tablespoons Dijon mustard
- 4 eggs (1 per serving)
- Cook the red onion in a pan until soft.
- Add chopped garlic and shallot.
- When they start to turn transparent, add the shredded Brussels sprouts, olive oil, mustard, salad dressing and herbs.
- Mix well and cover so it steams a bit.
- When the sprouts start to get soft, add the chopped ham and leave uncovered.
- When it looks just about done, make sunny side up eggs and add to the top.
