Green, Eggs & Ham (Warm Brussels Sprout Salad)

  1. Cook the red onion in a pan until soft.
  2. Add chopped garlic and shallot.
  3. When they start to turn transparent, add the shredded Brussels sprouts, olive oil, mustard, salad dressing and herbs.
  4. Mix well and cover so it steams a bit.
  5. When the sprouts start to get soft, add the chopped ham and leave uncovered.
  6. When it looks just about done, make sunny side up eggs and add to the top.
