Herbed Greek Chicken Salad

  1. Combine oregano, garlic powder, 1/2 teaspoons pepper, and 1/4 teaspoons salt in a bowl.
  2. Heat a nonstick skillet over medium-high heat.
  3. Spritz with cooking spray.
  4. Add chicken and spice mixture; saute chicken until done.
  5. Drizzle with 1 tablespoons lemon juice and stir.
  6. Remove from pan.
  7. Combine remaining 2 teaspoons juice, remaining 1/4 teaspoons salt, remaining 1/4 teaspoons pepper, yogurt, tahini, and garlic in a small bowl, and stir well.
  8. Combine lettuce, cucumber, tomatoes, and olives.
  9. Place 2-1/2 cups lettuce mixture on each of four lates.
  10. Top each serving with 1/2 cup of chicken mixture and 1 tablespoons cheese.
  11. Drizzle each serving with 3 tablespoons yogurt mixture.
  12. Serve and enjoy!
