Carrot Cookies With Orange Glaze

  1. Carrot Cookies:.
  2. Stir together flour and baking powder; set aside.
  3. In large saucepan, melt oleo.
  4. Remove from heat.
  5. Stir in sugar, eggs, carrots and extracts.
  6. Mix until smooth, soft dough.
  7. Cover tightly and refrigerate for at least 1 hour or up to 3 days before baking.
  8. Drop by rounded teaspoon 2"-inches apart on greased sheets.
  9. Bake at 375 for 10-12 minutes or until slightly browned and edges browned.
  10. Cool for 1 minute on sheets and remove to racks set over waxed paper.
  11. While still warm, glaze each with 1/2 teaspoon Orange Glaze.
  12. Orange Glaze: In medium bowl, combine orange juice and grated orange peel.
  13. Stir in confectioners sugar until thick and smooth.
  14. Makes 1 cup.
