Whole Wheat Pita Bread Recipe

  1. Stir 2 c. flour, yeast, and salt in large bowl.
  2. Stir in water gradually, beat till smooth.
  3. Add in 3/4 c. flour and beat again.
  4. Stir in sufficient flour to make a soft dough.
  5. Beat well.
  6. Turn out onto a floured board.
  7. Knead till smooth and elastic.
  8. Let rise in oiled bowl, covered, 1 hour.
  9. Punch down, let rest 30 min, covered with damp cloth.
  10. Divide into 12 parts on floured board, roll each part into a five inch circle.
  11. Place on cookie sheet.
  12. Bake at 450 degrees about 5 min (till puffed and bottoms are brown).
  13. Cut off tops, pull pocket open and fill.
