Southwestern Potato Packet
- 1 onion, thinly sliced
- 1-1/2 lb. (675 g) new potatoes (about 5), cut into 1/2-inch cubes
- 1/4 tsp. chili powder
- 1/4 tsp. ground cumin
- 1 can (127 mL) chopped green chiles, undrained
- 1 cup Cracker Barrel Shredded Old Cheddar Cheese
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Heat barbecue to medium-high heat.
- Spray large sheet of heavy-duty foil with cooking spray.
- Place onions in centre of foil; top with potatoes.
- Mix chili powder and cumin; sprinkle over potatoes.
- Top with chiles.
- Fold foil to make packet.
- Grill 30 min.
- or until potatoes are tender.
- Cut slits in foil to release steam before carefully opening packet.
- Sprinkle with cheese.
- Serve topped with salsa, sour cream and cilantro.
