CHICKEN SCAMPI with RICE or PASTA
- 1/4 cup EVOO
- 4 clove minced garlic
- 1 diced red bell pepper
- 1 diced onion
- 1/2 large chicken breast
- 1/2 cup flour for dredging
- 1 pinch or so red pepper flakes
- 1 tomato or 1 can diced tomatoes drained
- 2/3 cup chicken broth
- 2 cup broccoli florets
- 3 tbsp butter
- 2 tbsp chopped parsley
- Heat evoo in large skillet over low heat.
- Add garlic, red bell pepper & onion.
- Cook & stir 10 mins.
- Cut chicken in 1 inch pieces.
- Dredge in flour add to skillet cook & stir abt 10 mins until chicken is done.
- Add red pepper flakes, diced tomatoes & chicken broth.
- Cook & stir abt 3 mins.
- Add broccoli florets cook & stir till crisp tender abt 5 mins.
- Stir in butter till melted.
- Turn off heat garnish with parsley.
- Serve over rice or pasta.
