CHICKEN SCAMPI with RICE or PASTA

  1. Heat evoo in large skillet over low heat.
  2. Add garlic, red bell pepper & onion.
  3. Cook & stir 10 mins.
  4. Cut chicken in 1 inch pieces.
  5. Dredge in flour add to skillet cook & stir abt 10 mins until chicken is done.
  6. Add red pepper flakes, diced tomatoes & chicken broth.
  7. Cook & stir abt 3 mins.
  8. Add broccoli florets cook & stir till crisp tender abt 5 mins.
  9. Stir in butter till melted.
  10. Turn off heat garnish with parsley.
  11. Serve over rice or pasta.
