Quick Lo Mein
- 6 packages Ramen Noodles Any Flavor, 3 Ounce Packages
- 2 cans (14 Oz. Size) Vegetable Broth
- 1 package Stir Fry Season Mix, 1 Ounce Packet
- 3 Tablespoons Oyster Sauce
- 1 Tablespoon Sesame Oil
- 1 pound Mushrooms, Sliced
- 1 pound Shrimp (peeled And Tailed)
- 1/4 cups Chopped Chives
- OK, so this is the way I make it, but you can substitute the shrimp with any kind of meat (make sure pieces are small cubes or thin slices).
- Substitute another veggie or add more to it if you want.
- I made it with beef and broccoli once and used beef broth, but I always use the same seasonings since I like the combination so much.
- You can do fewer noodles and less meat and veggies, but I have to make enough for my husbands bottomless stomach and my 4 growing kids.
- Preheat oven to 350F.
- Put the noodles flat in the bottom of a casserole dish.
- Doesnt matter what kind, since you wont be using the seasoning packets that come with it.
- In a large bowl, whisk together the broth, stir fry seasoning mix, oyster sauce, and sesame oil.
- Pour over the noodles.
- Add the vegetables and meat to the top then cover tightly with foil.
- Bake 15 minutes, then stir everything together and cover it tightly again.
- Bake another 15 minutes, then stir it all up together again.
- Sprinkle with the chives and serve.
- *Now, heres the quickest way to make it.
- I needed a fast side one night, so I made up the broth, added the noodles and threw it in the microwave for 5 minutes.
- Cooked the veggies and meat on the stove quickly and tossed it all together.
- I prefer the oven method because the noodles come out more even and I dont have to open the microwave and stir every 1-2 minutes.
