Vanilla-Strawberry Cookies

  1. Onto a sheet of waxed paper, or a paper plate, sift flour and baking powder.
  2. Set aside.
  3. In a small bowl, cream margarine with sugar.
  4. Add vanilla and lemon peel and stir to combine.
  5. Add sifted flour and ice water and mix to form dough.
  6. Preheat oven to 375F.
  7. Between 2 sheets of waxed paper, roll dough to about 1/8" thickness.
  8. Remove top sheet of paper, and using 2 1/2" round cookie cutter, cut out cookies, placing on non-stick baking sheet.
  9. Form scraps of dough into a ball, and repeat rolling and cutting procedure until all dough has been used.
  10. Should yield 12 cookies.
  11. Bake 10-12 minutes.
  12. Use a spatula to remove cookies and place on a wire rack to cool.
  13. Top centre of each cooled cookie with an equal amount of no-sugar jam.
