Pumpkin Spice Cookies
- 2 14 cups flour
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 34 teaspoon cinnamon
- 14 teaspoon nutmeg
- 14 teaspoon ginger
- 34 cup shortening
- 12 cup packed brown sugar
- 12 cup white sugar
- 1 egg
- 12 teaspoon orange zest
- 8 ounces pumpkin pie filling (about 1/2 can)
- Mix flour, baking soda, baking powder, cinnamon, nutmeg ans ginger in one bowl.
- Beat shortening and sugars together in a second bowl.
- Add the egg, vanilla and orange zest and beat until smooth.
- Stir in the flour mixture a little at a time.
- After adding about half, add the pumpkin filling and then stir in the rest of the flour mix.
- Cover dough with plastic wrap and place in fridge for 3-4 hours to harden.
- Drop about 1 tablespoon of dough onto cookie sheet, keep at least one inch apart.
- Bake at 375F for 10-12 minutes (until brown and fork comes out clean when inserted into the middle) Transfer to cooling rack immediately.
