Mixed Greens Salad with Beets and Goat Cheese
- 2 each beets steamed until a fork easily goes in it, about an hour, peeled, sliced into strips
- 4 cups mixed salad greens fresh - rinsed, patted dry with a paper towel
- 1 x goat (chevre) cheese as needed
- 1 x walnuts chopped, as needed, optional
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon balsamic vinegar
- 1 x salt and black pepper as needed
- Mixed green leaves, a few beet juliennes, some crumbled goat cheese, garnish with chopped walnuts.
- Use a vinaigrette salad dressing.
